TAKE THIS TO YOUR NEXT BBQ

German Potato Salad

Hello Tangy and Bacony! You’re going to want to bring this one to your next BBQ. Who doesn’t love a good potato salad? Although this may not be identical to my Grandpa’s traditional German Potato Salad recipe I feel that it satisfies the tastebuds nonetheless.


You'll need:

3-4 cups of chopped boiled red potatoes

1 cup of chopped onion

4 cloves of garlic, finely chopped

4 Tbsp apple cider vinegar

2 Tbsp Dijon Mustard

1 Tbsp maple syrup

3/4 cup chopped green onion

5 slices of bacon *if your bacon is really thin add more

A handful of chopped fresh parsley

Salt and Pepper to taste

Directions:

  1. Go ahead and boil the potatoes until just tender and set aside when they are done.

  2. in a large pan or pot add chopped bacon and begin to cook. Midway through cooking add the onion and the garlic. Bacon should get crispy and onion translucent. ** if you render a lot of fat from the bacon separate it but leave some.

  3. add in the boiled potatoes and cook for about 3 minutes.

  4. add the vinegar, mustard, and maple syrup, and green onion. cook until it’s just absorbed. maybe a couple of minutes.

  5. transfer to a bowl and add the parsley and s&p to taste.

I encourage you to tap into your inner cook and kick it up a notch if need be.

**Depending on your desired tangy level you may need to add another splash of ACV or dabble of mustard. If it’s too tart add another Tbsp of Maple Syrup.
